I like to end my weekend unwinding with a cocktail or a glass of wine. I’ve been trying to persuade Mr. P to join me, so I’m not just drinking alone, and I finally convinced him the last few weekends.
It helped that I made a cocktail he enjoys. Our go-to drink order is a vodka collins and this is a similar beverage made with soda, a squeeze of lemon, vodka, and rhubarb syrup. I love the pale pink color that comes naturally from the rhubarb.
Mr. P has two extremes when it comes to alcohol. He either likes the really strong stuff like whiskey or the extremely sweet girlie cocktails. Everything else in between he’s not much of a fan of. This one is on the girlie side which suits him just perfectly. Happy weekend everyone!
Rhubarb Sour Cocktails
Serves: 1
Ingredients
- 1 oz vodka
- 1 oz lemon juice
- 2 oz rhubarb syrup (<a href=”http://kirbiecravings.com/2014/05/fruit-buckle-with-rhubarb-syrup.html” target=”_blank”>here</a> is a recipe for rhubarb syrup)
- 4 oz sprite
Instructions
- Mix all ingredients together in a glass. Serve with ice. Garnish with fresh rhubarb stalk if desired.
